Girl's Night!!!

 

GN1 and GN2 – I call it Girl’s night food, cause I’m not sure the guys will find this food fun!! My close friend of 18 years Stephanie came over and hung out the other night for some girl time, even when married or in a relationship we still need time with our girls!! We chatted and chatted, drank and cooked some yummy food. She really is into the Paleo lifestyle way of eating so we made some fantastic cookies and some meatballs that were pure heaven!! I know I know meatballs aren’t really a baked good, but hey I thought I would throw in what we ate for dinner as well cause it’s a great recipe!!!

 

Food Babe’s Chocolate Chip Cookies (from www.keyingredient.com)

 

1cup almond butter

1egg beaten

½cup date sugar

2tsp unsulphured molasses

1tsp vanilla extract

½tsp baking soda

¼tsp salt

4ounces of grain sweetened chocolate chips

 

Preheat oven to 350 degrees and line large baking sheet with parchment paper Mix sugar, molasses, egg, vanilla, baking soda, and salt in a large bowl Add almond butter, and stir to combine well Fold in chocolate chips Scoop 1 tbsp size balls onto parchment lined baking sheet Cook for about 12-15 mins (longer if you like crispy cookies) Place cookies on a cooling rack and cool for 5 mins

 

 

Italian Meatballs (from Paleo magazine cookbook)

 

1 lb grass-fed ground beef

1 lb ground pork

½ medium onion, finely chopped

3 garlic cloves, minced

¼ cup chopped fresh parsley

¼ cup almond meal

2 tbsp coconut flour

1 tsp oregano

½ tsp sea salt

½ tsp pepper

½ tsp basil

Pinch rosemary

2 tbsp coconut oil

½ cup marinara sauce

 

Mix all ingredients in a bowl and roll into balls (about the size of golf balls). In a large skillet over medium high heat melt coconut oil. Add meatballs to skillet. Brown meatballs on all sides about 8 minutes total. Turn heat to low and add ½ cup marinara sauce. Watch for hot splatters, stir gently and simmer for 5 – 10 minutes or until meatballs are cooked and sauce is heated through.

 

We added spaghetti squash. All you do is put a whole spaghetti squash on a cookie sheet and bake for about 30 minutes at 350 degrees. once done cut spaghetti squash in half and scrape out the insides which will look like spaghetti noodles and add to the meatball and sauce and mix together and its almost like spaghetti and meatballs!! You can also add some shaved parmesan to the dish, it’s all really really good!!! You not only are enjoying some great food but food that is healthy for your body!!
