Rob's Traditional Egg Nog Recipe:

Eggnog’s origins are debated but most seem to agree it was invented in Europe, but made famous and used most by America’s founding fathers, in particular, George Washington. As designed, it always had liquor from the start; 18th century Americans would be appalled to know that we had virgin-ized the beverage that kept them warm while fighting for the country’s independence. This version will not taste like what you buy in the store; yes, it’s creamy and with similar flavors, but egg nog made classically and from scratch simply is, by definition, different from a mass produced pasteurized version for stores.

Bear in mind that traditional egg nog uses raw eggs. Gasp. There is a way to cook the eggs first, but I am not a wussy, so I don’t have that way here. Google it.

This is the labor-of-love, truly from scratch version and will, for maximum convenience and best results, require the use of an electric mixer.

2 eggs, separated (2 egg yolks 2 egg whites)

1/8 cup sugar, plus ½ tablespoon

½ pint half and half

½  cup heavy cream

½  ounce bourbon (recommend maker’s mark)

1 ½  ounces brandy (recommend E&J)

1 teaspoon nutmeg

One drop of white vinegar for egg whites

Pinch of salt

MAKES ABOUT 3 CUPS

  • In a bowl with a mixer, beat the egg yolks until they lighten in color (about 3 minutes at low speed) and then slowly add in the 1/8 cup sugar and continue to beat until completely dissolved. Remove from mixer and add to the bowl the half and half, cream, bourbon, brandy, nutmeg and stir to combine.
  • Place the egg whites in the bowl of a mixer and beat to soft peaks. With an electric mixer, this takes about one minute at low speed with a pinch of salt, followed by adding the drop of vinegar and mixing at high speed for 3 additional minutes. Then, with the mixer still running gradually add the remaining ½ tablespoon of sugar and continue to mix until dissolved, about 15 seconds.
  • Whisk the egg whites into the mixture, pour into a pitcher and chill before serving

Rob will be making us my version of an end of the night dessert drink called a “Toasted Almond,” which has many varieties:

He was introduced to this drink decades ago by hi New Jersey State Trooper Uncle Dave. He didn’t drink often, but if he wanted a semi-sweet nightcap, this was on his short list. There are millions of variations on this drink, including one served at many bars made with ice cream, which I find ridiculously heavy. This is the favorite version:

2 Ounces amaretto

1 ounce Irish cream

1 ounce Godiva liqueur

2 ounce milk

MAKES ONE DRINK

1.Combine all ingredients, mix and serve over ice in a tumbler/rocks glass

The Spicy Meatball is:
1oz sausage-infused whiskey
1/4oz sweet vermouth
1/8oz Amaretto
1/8oz Amaro
2 dashes of Angostura bitters

Sausage-infused whiskey
For each 750 ml of whiskey: In a pan, cook 4-5 spicy sausages and collect the fat when they're done. In a separate glass container, pour the fat while it's still hot in with the whiskey and cover with plastic wrap. Let sit in the refrigerator for 24 hours, then move to the freezer for 3-4 hours so the fat will solidify. Scoop the solids out and fine-strain the small particles with a cheese cloth and return the remaining whiskey to the original bottle.

Not Your Father's Mule

MAKES ONE DRINK

3 ounces quality vodka (I use Ketel One or Tito’s)

3 ounces NOT YOUR FATHER’S Ginger ale

3-5 ounces sparkling water

¼ fresh lime, squeezed

Ice

A Tall 12-16 ounce serving glass

Stirring spoon/utensil

  • Fill the bottom of the glass with 3 ounces vodka

  • add lime juice

  • add ice to top of glass

  • Fill remainder of glass with NOT YOUR FATHER’S ginger ale and sparkling water

  • stir and enjoy

Rob's Egg Nog

2 eggs, separated (2 egg yolks 2 egg whites)1/8 cup sugar, plus ½ tablespoon½ pint half and half½ cup heavy cream½ ounce bourbon (recommend maker’s mark)1 ½ ounces brandy (recommend E&J)1 teaspoon nutmegOne drop of white vinegar for egg whitesPinch of salt

MAKES ABOUT 3 CUPS

1. In a bowl with a mixer, beat the egg yolks until they lighten in color (about 3 minutes at low speed) and then slowly add in the 1/8 cup sugar and continue to beat until completely dissolved. Remove from mixer and add to the bowl the half and half, cream, bourbon, brandy, nutmeg and stir to combine.

2. Place the egg whites in the bowl of a mixer and beat to soft peaks.

3. Whisk the egg whites into the mixture, pour into a pitcher and chill before serving

We will also try a shot of whiskey with a pickle back, or with juice from Rob's Spicy Marinated Green Beans!!!

If you are interested in trying to make your own marinated green beans, the recipe is as follows:

2 Pounds Green beans, trimmed

3 cups distilled white vinegar

5 whole garlic cloves

5 garlic cloves, sliced

2 teaspoons kosher salt

1 tablespoon whole black peppercorns

2 teaspoons crushed red pepper

3 teaspoons white sugar

1 tablespoon of salt for boiling as described below

1 bunch fresh dill

1. Bring a large saucepan of water to a boil; add salt. Prepare an ice-water bath; set aside. Cook beans until just tender, about 2 minutes. Immediately transfer with tongs to the ice-water bath to stop the cooking and maintain the crispness of the beans. When cool, drain beans and transfer to a Mason jar

2. Place all other ingredients, except dill in a saucepan and bring to a boil over high heat. Reduce heat to low and simmer for five minutes, stirring every minute. Remove from heat, add dill, stir, and allow to cool completely, about 30 minutes. Fill mason jar with brine and refrigerate.

Drinking With The Maggots - 6/12/15

Our first drink to try was a Scooby Snack as submitted by Maggot Listener Lester.  The verdict: Very sweet!  The shot goes down TOO easy.  Too many of these things and you're bound to get sick before it gets you buzzed.

Here is the recipe:

If you want to drink along with us, the recipe Lester provided is as follows:

1 ounce Malibu Coconut Rum
1 ounce Midori
1.5 ounces Pineapple Juice
.5 ounce milk (we will be using cream)

We also tried a shot of Jameson with a pickle back!  Otherwise known as a Brooklyn Hooker.  The verdict: OUTSTANDING!  This turns taking a shot of your favorite whiskey into a tasty snack.  Be careful, this can get addicting.

Here is the recipe:

2 oz of your favorite Whiskey

1 oz of your favorite Pickle Juice
(You can order straight pickle juice online, or just sip from the pickle jar.  It doesn't hurt to snack on a pickle prior to a shot either. It just adds to the tasty flavor)
